Ingredients:

  • 8oz oyster mushrooms, torn into strips

  • 1 large onion, thinly sliced

  • 1 bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • 4 vegan hoagie rolls

  • Vegan mayo or any other vegan sauce of your choice

  • Lettuce, tomato slices, and any other desired toppings

Instructions:

  1. Mushroom Prep Time: First, let's address that thought you might be having: “Are mushrooms hard to cook?” The answer is a big YES... to them being super easy! Heat the olive oil in a large pan over medium heat. Add the garlic and let it infuse the oil with its aroma.

  2. Sauté: Add the sliced onions and bell peppers. Sauté until they're soft and translucent. Stir in the oyster mushrooms, smoked paprika, salt, and pepper. Cook until the mushrooms are tender and slightly crispy on the edges, which should be about 7-10 minutes.

  3. Assemble: Slather your vegan hoagie rolls with vegan mayo or your favorite sauce. Lay down some fresh lettuce, followed by the sizzling oyster mushroom mixture. Top with tomato slices and any other toppings your heart desires.
